Baccarat Grilled Cheese (serves two)

Ingredients:

Mornay Sauce:

- 8 oz (300 grams) whole milk

- 1 oz (28 grams) butter

- 1 oz (28 grams) flour

- 3 oz (85 grams) Emmental cheese, grated

Sandwich:

- 4 oz (115 grams) aged Cheddar cheese, sliced

- 4 oz (115 grams) Comte cheese, sliced

- 4 oz (115 grams) Raclette cheese, sliced

- 9 slices of toasted bread

Preparation:

- In a small pot, melt the butter then add the flour, whisking until it forms a paste.

- Add the milk gradually and slowly cook the bechamel until it has a creamy consistency.

- Remove the pot from the stove and add the grated Emmental cheese.

- Season with salt and pepper to your liking.

- Spread the Mornay sauce on the toasted bread and add the sliced Raclette cheese.

- Add a second slice of toast, spreading the Mornay sauce on both sides and on top of the Raclette cheese. Then add the sliced aged Cheddar cheese.

- Add another slice of toast, spreading the Mornay sauce on both sides and on top of the Cheddar. Then add the sliced Comte cheese.

- Finish with a fourth slice of toast, once again spreading the Mornay sauce on both sides.

- Melt a bit of butter in a small pan and slowly toast the sandwich until it has a nice golden color on both sides.

- Finish it in an oven set at 340 degrees F for 10 minutes.
